暦の上では春ですが、まだ北海道は雪の中。
春野菜には少し早いこの時期に味わえる、オススメの道産野菜とそれを美味しく調理する野菜ソムリエのいる札幌のお店をご紹介します。

 3月も食べることのできる代表的な道産野菜といえば、ジャガイモ。
雪の下で越冬し、甘みがぐんと増した「メークイン」「男爵」などが店頭に並びます。
煮物や揚げ物、サラダなど、さまざまな料理に使える万能野菜のひとつです。
 特に近年、栗のような風味で人気を集めるのが「インカのめざめ」や「インカのひとみ」。
この2種類は濃黄色が特徴ですが、紫色の「シャドークイーン」、ピンク色の「ノーザンルビー」など、ほかにも色鮮やかな品種があり、食卓に彩りを加えます。

Talking about the local vegetables available in March, nothing is more popular than potatoes! May-queen and Danshaku potatoes stored under the snow are now sweeter. They are versatile and delicious when boiled, fried and in salad. Recently new kinds of potatoes are on the market. Dark yellow potatoes, Inka no hitomi and Inka no Mezame are popular for their chestnuts like flavor. There are other colorful potatoes, such as purple colored Shadow Queen and pink colored Northern Ruby among others. The potatoes in various colors make dishes more delightful and cheerful.

 こうした色とりどりのジャガイモ「カラフルポテト」を、江別から仕入れているのが、レストラン「ベジカフェ まーくる」です。
オーナーの吉川雅子さんは、北海道で最初に野菜ソムリエの資格を取得した方。
こちらでは、季節に応じて手に入る野菜を生かした多彩なメニューをバイキング形式(ランチバイキング 男1150円、女1100円)で用意。
メニューは日替わりのため、当日までのお楽しみですが、この日は「カラフルポテト」がサラダボールとチップスになっていたほか、函館産の「雪ノ下大根」のお漬物、十勝産ゴボウのカレー、北海道産ラワンブキやウド、セリを使ったメニューなどがずらりと並んでいました。

At her restaurant, various seasonal vegetables dishes are offered on the lunch time buffet.(man: \1,150 and woman \1,100.) Everyday different dishes are offered. When we visited, they had colorful potatoes salad and chips, pickled Yukinsoshita Radish(produced in Hakodate), curry dish using burdock root (grown in Tokachi), and dishes using Rawan butter bar, udo, and seri wild vegetables all grown in Hokkaido.

 道産野菜の調理ポイントを伺ったところ、吉川さんは「ご家庭では、塩コショウでソテーしたり、茹でるなど、意外とシンプルな調理法でより美味しく味わえます。
市販のドレッシングを活用するのもオススメです」と話します。

Ms. Yoshikawa gave us a tip for cooking Hokkaido vegetables. “Simple cooking is the best. Fry or sauté the vegetables in a pan and dress them with salt and pepper. Or just boil them. Then season them with dressings you bought in a shop. It would be delicious.”
